Ingredients

Salad

  • 8 ounces orzo pasta
  • 1 cup cucumber sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh basil, chopped

Lemon Dressing

  • 2 tbsps lemon juice
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1 tsp salt
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper

Instructions

  • Cook the orzo according to the package directions in well-salted water.
  • Drain and transfer the cooked orzo to a large mixing bowl.
  • In a small bowl or measuring cup, whisk together the lemon juice, olive oil, honey, salt, oregano, garlic powder, and black pepper until well combined.
  • Pour the dressing over the warm orzo and toss to coat.
  • Add the cucumber, cherry tomatoes, red onion, chopped basil, and crumbled feta.
  • Gently stir until everything is evenly combined.
  • Serve immediately, or refrigerate for at least 30 minutes before serving for an even more refreshing pasta salad.
