Ingredients

  • 2 cups all purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 1 1/2 cup milk (any kind)
  • 1 egg
  • 3 tbsp melted butter
  • 3 tsp vanilla

Instructions

  • Heat a buttered griddle or nonstick pan over medium-low heat.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  • Add the milk, melted butter, vanilla, and egg. Stir until just combined. Do not overmix. A few lumps are perfectly fine and help keep the pancakes fluffy.
  • Using a 1/4 cup scoop, pour the batter onto the warm griddle.
  • Cook for about 2 minutes, or until bubbles begin forming on the surface and the edges start to set.
  • Flip and cook for another 1–2 minutes until golden brown and cooked through.
  • Serve warm with butter and syrup.
