Heat a buttered griddle or nonstick pan over medium-low heat.
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
Add the milk, melted butter, vanilla, and egg. Stir until just combined. Do not overmix. A few lumps are perfectly fine and help keep the pancakes fluffy.
Using a 1/4 cup scoop, pour the batter onto the warm griddle.
Cook for about 2 minutes, or until bubbles begin forming on the surface and the edges start to set.
Flip and cook for another 1–2 minutes until golden brown and cooked through.
Serve warm with butter and syrup.
