The Best Coconut Mojito Recipe

This Coconut Mojito combines fresh mint, lime juice, coconut rum, cream of coconut, and club soda for a refreshing tropical cocktail. Easy to make and full of island flavor, it's the perfect drink for summer evenings, vacations, or relaxing on the patio.

Ingredients

  • 6 fresh mint leaves + more for garnish
  • 1 ounce lime juice
  • 1 1/2 ounces coconut rum
  • 1 ounce cream of coconut
  • 3-4 ounces club soda

Instructions

  • Add the mint leaves and lime juice to a cocktail shaker.
  • Using a muddler, gently muddle the mint leaves to release their oils and flavor.
  • Add the coconut rum and cream of coconut to the shaker.
  • Fill the shaker with ice and shake vigorously until well chilled.
  • Fill a serving glass with fresh ice.
  • Strain the cocktail into the prepared glass.
  • Top with 3–4 ounces of club soda and stir gently to combine.
  • Garnish with additional fresh mint leaves and serve immediately.
