Sheet Pan Chicken Fajitas (Easy 30-Minute Dinner)

These sheet pan chicken fajitas are an easy, flavor-packed dinner made with juicy seasoned chicken, colorful bell peppers, and sweet onions—all roasted together on one pan. They're quick to make, easy to clean up, and taste just as good, if not better, than your favorite Mexican restaurant!

Ingredients

  • 2 large chicken breasts, sliced into thin strips
  • 3 bell peppers, sliced (any color)
  • 1 large yellow onion, sliced
  • 2 tbsp olive oil

Fajita Seasoning

  • 2 tsp chili powder
  • 1/2 tbsp cumin
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 2 tsp salt

Optional Topping

  • chopped cilantro

Instructions

  • Preheat your oven to 400°F.
  • Add the sliced chicken, bell peppers, onion, and olive oil to a large mixing bowl.
  • Sprinkle in all of the seasonings and toss until everything is evenly coated.
  • Spread the fajita mixture onto a large baking sheet in a single, even layer.
  • Bake for 10 minutes.
  • Open the oven door and, using a spatula, carefully stir the chicken and vegetables right on the baking sheet.
  • Close the oven and continue baking for another 5 minutes.
  • Then switch the oven to High Broil and broil for 2–3 minutes, or until the chicken is cooked through and the peppers and onions have lightly charred around the edges.
  • Serve immediately over mexican rice or in warm flour or corn tortillas with your favorite toppings.
