Ingredients

  • 3/4 cup salted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 3/4 cups all-purpose flour
  • 1 cup white chocolate chips

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar for about 2 minutes, until light and fluffy.
  • Add the egg and vanilla extract and mix until combined.
  • Stir in the lemon zest and fresh lemon juice.
  • Mix in the baking powder, baking soda, and salt.
  • Slowly add the flour and mix until fully incorporated.
  • Add the white chocolate chips and gently mix until evenly distributed throughout the dough.
  • Using about 2 tablespoons of dough per cookie, scoop the dough onto the prepared baking sheet.
  • Bake for 8–10 minutes, or until the edges are lightly golden and the centers are set.
  • Allow the cookies to cool on the baking sheet for several minutes before transferring to a cooling rack.
