Ingredients

Chicken

  • 2 chicken breasts, butterflied and cut into 8 pieces
  • 1 tbsp lemon pepper seasoning
  • 1 tsp garlic powder
  • 1 tbsp olive oil

Gnocchi and Sauce

  • 4 cloves garlic, minced
  • 3/4 cup chicken broth
  • 2 tbsp lemon juice
  • 1 1/2 cups heavy cream
  • 1 pound uncooked potato gnocchi
  • 3/4 cup freshly grated Parmesan cheese
  • 3 cups fresh spinach
  • 1 tsp salt
  • 1/2 tsp black pepper

  • grated Parmesan for serving

Instructions

  • Season both sides of the chicken with the lemon pepper seasoning and garlic powder.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Cook the chicken for 5–6 minutes per side, or until the internal temperature reaches 165°F.
  • Transfer the chicken to a plate and set aside.
  • Reduce the heat to medium.
  • Add the minced garlic and cook for about 1 minute, stirring frequently until fragrant.
  • Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream.
  • Add the uncooked gnocchi, salt, and black pepper.
  • Bring the sauce to a gentle simmer and cook for 5–7 minutes, stirring occasionally, until the gnocchi is tender and the sauce has thickened.
  • Stir in the fresh spinach and grated Parmesan cheese until the spinach has wilted and the cheese has melted into the sauce.
  • Return the cooked chicken to the skillet and spoon the sauce over the top.
  • Serve immediately with extra grated Parmesan, if desired.
